A bold, no-nonsense noodle salad inspired by the power and presence of Wilco Louw. Freshly cooked noodles are tossed with sweet peppers, red onion, and a generous crumble of creamy feta cheese. A simple but punchy dressing of olive oil, redwine vinegar, lemon, and a touch of braai smoke seasoning brings everything together with clean, elevated flavour.
2 cups rotini pasta
cup extra-virgin olive oil
¼ cup red wine vinegar
2 cloves garlic, crushed
1 tablespoon lemon juice
2 teaspoons dried oregano
salt and pepper to taste
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, chopped
½ cup crumbled feta cheese
Salt your noodle water properly as it is your only chance to season the noodles from the inside. Make sure you use a good amount of salt, as a pinch of salt won't be enough.
Do not overcook the noodles as it will turn to mush once mixed. Keep them slightly fi rm.
Char the peppers over the braai or in a hot pan to add sweetness and that smoky braai-worthy fl avour.
