Coconut Pineapple Shrimp Skewers

When you’re in the mood for something tropical, you can’t go wrong with coconuts, pineapples and shrimp. So visit your nearest fishmonger and stock up on the freshest shrimps you can find. Then try this super easy coconut shrimp skewer recipe, it’s sure to get you into that summer feeling!

Ingredients

½ cup of coconut milk 

2 teaspoons garlic, crushed 

4 teaspoons of your favourite hot sauce 

2 teaspoons soy sauce 

¼ cup orange juice, freshly squeezed 

¼ cup lime juice, freshly squeezed 

455g large shrimps, peeled and deveined 

340g pineapple chunks 

canola oil 

cilantro or green onion, freshly chopped

Instructions

  1. In a medium bowl or self-sealing bag, combine the coconut milk, hot sauce, garlic, soy sauce, orange juice, and lime juice. Add the shrimp and toss to coat. 
  2. Cover or seal the bag and place in the refrigerator to marinate for 1 - 2 hours, tossing occasionally. 
  3. If you’re using wooden skewers, soak them in warm water, so they don’t burn on the fire.
  4. Prepare the pineapple by cutting it into 25mm chunks. 
  5. Preheat your grill to medium-high heat or prepare your braai coals so that they are ready and hot. 
  6. Remove the shrimp from the sealing bag, and keep the marinade for basting. 
  7. Thread the shrimp onto a skewer, alternating with the pineapple. Lightly brush the grid with canola oil, then place the shrimp on the braai. 
  8. Braai the shrimp for 3 - 4 minutes, brushing with the marinade. Then turn and cook for another 3 - 4 minutes, brushing with the marinade until the shrimps are cooked through. 
  9. Remove. Serve hot with a garnish with cilantro and green onion.
