6 -8 chicken thighs
2 lemons, sliced
2 tsp kosher salt
1 tsp pepper
FOR THE BUTTER:
½ cup butter softened
1 tbsp fresh parsley, chopped
1½ tsp lemon zest, finely grated
1½ tsp fresh thyme leaves, chopped
1½ tsp pepper
1. Combine butter mixture into a small bowl and mix well. Set aside.
2. Loosen skin from chicken thighs. Insert about 1 tablespoon of butter mixture under the skin or each chicken thigh until all butter mixture is used.
3. Season both sides of chicken thians with salt and pepper.
4. Make sure the braais temperature is medium neat and place chicken thighs onto the heat.
5. Top chicken thighs with lemon slices
6. Braai chicken thighs for for about 20 minutes or until golden brown with crispy skin. You can also measure the internal temperature with your Megamaster Digital Thermometer, the temperature should be 74°C.
7. Transfer the chicken thighs to a serving tray and let it rest for 10 minutes.
