Every braai has a story, and this cheesy braai pap tert belongs at the centre of it. Rich, creamy, and baked with a golden cheese crust, it's the comforting side dish that brings family and friends together around the fire.

Ingredients

FOR THE PAP:

3 cups water

1 cup milk

3 cups maize meal

1 can whole sweet corn

Salt and pepper to taste


FOR THE FILLING:

30ml Oil

2 onions, diced

250g mushrooms, sliced

250g bacon, diced

15 ml sugar

410 g canned chopped peeled tomatoes

250ml fresh cream

1/2 packet cream of mushroom soup

powder

Mixed herbs, salt, and pepper to taste

250g cheese, grated cheddar cheese

Instructions

FOR THE PAP:

  1. Using your Megamaster Enamel Series Round Pot, add the water and milk, and heat through.
  2. Add the maize meal and salt and stir until it is lump free. Cover and simmer over very low heat for 5 – 7 minutes. Add the sweetcorn and mix through. Set aside.

FOR THE FILLING:

  1. Heat the oil and fry the onions until soft. Add in the garlic, bacon, mushrooms, peeled tomatoes, and sugar.
  2. Season with mixed herbs, salt, and pepper.
  3. In a seperate bowl, mix the cream with the cream of mushroom soup powder until smooth.
  4. Remove the onion and tomato mix from the heat and stir in the cream mixture.
  5. Preheat your oven or your Megamaster covered braai to 180ºC.
  6. Grease your Megamaster Enamel Series Braai Pan With Lid with butter and start layering your pap tert. Start with a layer of pap at the bottom of your dish.
  7. Add a layer of the bacon and cream mixture. Sprinkle a generous layer of cheese.
  8. Repeat the layers until all ingredients are used, finishing with a cheese layer on top.
  9. Place the dish in the oven or in your Megamaster covered braai over indirect heat and bake for about 20 minutes. Remove once cheese has melted and is golden brown.
