FOR THE SEASONING:
1 - 1/3 cups brown sugar
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. smoked paprika
1 - 1/4 tsp. ground cumin
1 - 1/4 tsp. ground pepper
1 - 1/4 tsp. aromat
1 - 1/4 tsp. cayenne pepper
FOR THE SAUCE:
2 tbsp. canola oil
1 medium onion, finely chopped
1 cup tomato sauce
1/3 cup dark brown sugar
1/4 cup golden syrup
1/4 cup chutney
1 tbsp. apple cider vinegar
2 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. ground mustard
1/4 tsp. smoked paprika
1/4 tsp. cayenne pepper
Let the ribs sit overnight in the fridge after seasoning to get the best results.
Add wood chips when ribs are on indirect heat for a smoky flavour.
Add chilli flakes if you want some spiciness.
