FREQUENTLY ASKED QUESTIONS

For a quick smoke at the end of your braai:
  1. Soak several handfuls of wood chips in cold water (or wine) for at least 30 minutes before your braai.
  2. Braai your meat.
  3. When your meat is about 70% cooked, add handfuls of wood chips to your coals.
  4. The more wood chips you use, the more intense the smoky flavour in your food.
  5. Close the lid of your braai for smoky results.
For an intense smoke:
  1. Soak several handfuls of wood chips in cold water (or wine) for at least 30 minutes before your braai.
  2. Add wood chips onto a piece of foil. You can be quite generous with the amount you use.
  3. Securely close your foil to look like a cylinder.
  4. Make 3 holes at the top of your foil cylinder.
  5. Place on your coals.
  6. You want your wood chips to smoulder, not burn away, but the foil will protect it from burning.
  7. Replace your foil cylinder if your smoke gets less intense.
  8. Close the lid of your braai for optimum smoky results.
